Cod in Garlic Puree (Skordalia)Ingredients for Cod:
2 salted cod fillets
1 can of beer
1 ½ cup of flour
Salt, white pepper
1 beaten egg white
Cooking oil
Skordalia ( garlic purée):
1 kilo bread
1 cup of olive oil
3-4 teaspoons of white vinegar, 4-6 cloves of garlic, Salt
Place the cod in water at least for 24 hours chopped in portions and keep changing the water. Drain the cod then prepare the batter. Place the flour in a bowl and season with salt and pepper. Slowly add the beer until thick and then the beaten egg white. Heat the oil and soak the cod in the batter and then fry. Place on some kitchen roll to drain from the excess oil.
Remove the crust form the bread and soak in water for 10 minutes. Drain and rub with your hands, then place it the blender with the rest of the ingredients. Serve at room temperature.
