Roxakia (Dough Cookies)
1 glass of olive oil
1 tablespoon of cinnamon and cloves
2 eggs
1 teaspoon of baking powder
Orange or lemon zest
½ kilo of flour (approximately)
3 teaspoons of cocoa powder
Preparation:
Mix milk with the yeast and then add all the ingredients apart from the cocoa and at the end the flour. The dough shouldn’t be too hard. Divide in two and add in one them the cocoa and blend well. Cover both for 20-30 minutes until the dough start to rise. Then take a piece from the white dough and shape a small log around 15cm. On top add a log from the brown dough and using a rolling pin blend together. Make the dough into a roll and cut in slices with a knife. Round the pieces and place them on greased pan and bake for 20 minutes approximately in the middle of the oven at 200ο C. When they are ready dip them immediately in the pot with the hot syrup to soak and then serve on a plate. If you like you can sprinkle cinnamon on top.
